Those desserts you sent are unbelievable!  Or, should I say, were unbelievable – we went through those in no time.  Are they milk based, like ras malai? Couldn’t get enough – the carrot and the pistachio, in particular, were mind-blowing.

Chef Surbhi baked and decorated an eggless cake for our daughter’s birthday. Spectacular. Even the folks who love desserts could not tell it was egg free. And it was tiered – like a wedding cake. We had decided to go all out on this. Lots left over and appreciated and envied by all!  The process from start to finish was just fine. Chef is detailed and very passionate about her stuff.

The Vegans raved about the Vegan cake you did. My initial reaction to the main cake was that the cake itself (as opposed to the fillings) was a little dense. Not quite dry, but not moist either. The fillings were very well done: a mature, not too sweet, but not tart at all blend of flavors. The more I ate of my piece, the better the whole combination tasted. I realized later, that although I prefer a moist cake, it would have been impossible to construct a cake of that size and weight with intervening layers that could be compacted by the weight above them. It would have turned into a “landslide”. I also realized that making such a cake with a buttercream icing was probably more difficult than it would have been with the more  rigid, commercial icing. Most important of all, I was able to serve the cake to my guests who have food allergies with peace of mind, because of your intelligent and knowledgeable responsiveness to my requirements concerning the same.  Many thanks for a job well done

Ed and I owe you a heap of thanks for all the little thoughtful details that you contributed, and for your awesome problem solving skills at the party itself.
